Doris Janzen Longacre’s ‘More-With-Less Cookbook’ is an exceptional cookbook that was first produced on request by the Mennonite Central Committee in the 1970s. It focuses on cooking inexpensive, simple, and delicious cuisine with the least amount of trash. The cookbook promotes limiting meat and dairy intake, increasing intake of healthy grains and fresh fruit, and staying away from highly processed convenience foods.
The most recent edition has a fresh introduction and updated nutritional and price information for a new generation of cooks, but it does not contain any new recipes. The book, which was co-published by the Mennonite Central Committee, a global ministry of relief, development, and peace, is a part of the World Community Cookbook series.
