A cookbook titled “The American Woman’s Cookbook” was edited by Ruth Berolzheimer. Under the sponsorship of the Delineator Institute, it was first published in 1938 by the directors of Cornell University’s College of Home Economics. The book has been printed several times in numerous versions and has over 10,000 recipes. As a specialist in child welfare and cookery, Ruth Berolzheimer had a lengthy and distinguished career. She edited and wrote several books in addition to serving as the head of the Culinary Arts Institute.
