Arthur William Knapp

Arthur William Knapp wrote about cacao as an agricultural crop, industrial material, traded commodity, and source of food. Cocoa and Chocolate, published by Chapman and Hall in 1920, carries the fuller subtitle Their History from Plantation to Consumer. Knapp designed the book for general readers rather than specialists, beginning with chocolate’s history before following cacao varieties, cultivation, fermentation, drying, transport, factory processes, and the manufacture of cocoa and chocolate.
