About this book

A loaf of bread becomes a test of household skill in Marion Harland's practical manual. She challenges cooks who attribute their results to luck, tracing poor baking to the quality of flour, the state of the yeast and careless preparation. Her conversational introduction addresses the strain of daily housework and argues that method, economy and practice deserve serious attention.

The 1883 volume combines family recipes with guidance on domestic tasks. Its contents range from soups, vegetables and preserves to bread, cream cheese and cleaning. In the cheese instructions, draining, pressing and cool storage receive precise attention; in the bread chapter, kitchen anecdotes lead into a discussion of technique. Readers interested in American food history can find both the details of everyday cooking and a housekeeper's forceful views on the work expected of women.
