About this book
A Friend in the Kitchen is a book by Anna L. Colcord. The text says that bread stands at the head of all foods and has very properly been termed the staff of life. A verse spoken in the voice of the corn says it was made to be eaten, not to be drank, and to be thrashed in a barn, not soaked in a tank.
One bread recipe has the dough covered with a tin lid to keep a crust from forming over the top, then with several thicknesses of cloth, and set in a warm place until it rises up full. The text says Graham bread should not be mixed as stiff as white bread. For pearl barley, the directions add five cups of boiling water to each cupful, with a teaspoonful of salt, and cook it in a double boiler for three or four hours, to be served with cream, lemon sauce, or stewed fruit. One saying on sauces says that rich sauces and highly-seasoned dishes provoke thirst.
