About this book
Dietetics for Nurses is by Fairfax T. Proudfit, an instructor and clinical dietitian, in a second edition marked as completely revised. Under Functions of Fat, the text says that fat serves as the most compact form of fuel available to the body for the production of energy, and that weight for weight fat furnishes twice as much heat as the carbohydrates. The text compares two quantities: about two tablespoonfuls of sugar are required to produce 100 calories, whereas one scant tablespoonful of olive oil will produce a like number of heat units.
A worked calculation has six ounces of limewater and 30 ounces of gravity cream and skimmed milk in the mixture, which thus contains 4% fat, 7% sugar, 2% protein, and 0.35% starch. A section on obesity gives its causes as heredity, overeating, unbalanced diet, chronic alcoholism, and disturbed metabolism.
