About this book

Miss Beecher's Housekeeper and Healthkeeper presents recipes for economical and healthful cooking together with directions for securing health and happiness. Directions for broiled mutton or lamb chops call for removing the skinny part, adding a little pepper and salt, and broiling over a quick fire. A bread recipe uses coarse flour, warm water, yeast, salt, melted lard or butter, sugar or molasses, and soda.

The discussion of health treats its preservation as indispensable to every duty and rejects sacrificing health for another advantage or enjoyment. The health discussion allows exceptions in emergencies when risking health and life can save oneself and others from greater evils.
