About this book
Prices, portions and the right season for a dish matter as much as ingredients in Mrs. Beeton's domestic handbook. First collected in a bound edition in 1861, it presents cooking within a larger system of household responsibilities. The preface explains its attention to economical meals and the use of cold meat, while the contents extend from kitchen organisation to servants, childcare and legal matters.
Recipe entries use a consistent arrangement, giving preparation directions alongside cooking time, likely expense and the number of people served. In the pages on game birds, instructions for the table sit beside accounts of migration, habitat and feeding habits. That mixture makes the book useful for studying both English food and the assumptions behind nineteenth century home life. Its detailed records of costs, seasonal supplies and domestic duties give readers a view of how meals and household work were planned.
