About this book
The Flowing Bowl is by Edward Spencer. The head of chapter VI, ALL ALE, lists topics including the introduction of ale into Britain, porter and stout, and the origin of bottled ale, among others. The text says Nature, which is ever kind, turned the martyrdom and misery of Bloody Mary's reign to good, and brought about bottled beer.
A set of old directions says the brewing of Bottle-ale differeth nothing at all from the brewing of strong Ale, only it must be drawn in a larger proportion, as at least twenty gallons of half a quarter. The writer confesses that the above directions are somewhat vague to the writer's untutored mind. A recipe says to let all these stand nine days close covered, stirring three or four times a day, then add three pounds of fresh poppies, or three handfuls of dried poppies, and to let it stand a week longer, then strain it out and bottle it. The directions for making King William's Posset say to take a quart of cream, and mix with it a pint of ale, then beat the yolks of ten eggs and the whites of four.
