About this book
R. H. Chittenden wrote The Nutrition of Man. A table of total strength lists, among others, Broyles, Coffman and Cohn. The text says that the men, restricted for five months to a daily diet with only one-third to one-half the amount of proteid food they had been accustomed to, showed no loss of physical strength.
The text says a peculiar enzyme known as rennin acts upon the casein of milk, the chief proteid constituent, transforming it into a related substance commonly called paracasein. The text says milk, as the sole nutriment of the young, occupies a peculiar position as a foodstuff. The text says physiologists are studying, by scientific methods, the effects of smaller amounts of food than custom prescribes on the condition of the body.
