About this book
The chapter on putrefaction and fermentation discusses chemical changes produced by unicellular plants such as yeasts and bacteria, describing their importance to the tanner for both good and evil. The text makes no scientific distinction between fermentation and putrefaction, while noting the customary use of the latter term for decompositions of nitrogenous animal matter yielding unpleasant smells and tastes.
The account of bark recognition describes microscopic cell forms and arrangements as useful identifying marks for the different barks. The instructions say tannin is most easily detected by staining with ferric chloride in absolute alcohol before sections are cut. The analysis rules require the whole sample of barks and other solid tanning materials, or at least 250 grms., to be ground until it passes through a specified sieve.
