About this book
A 2nd Edition dated 1914 is by Arthur Harden. The general preface says that the subject of Physiological Chemistry, or Biochemistry, is enlarging its borders to such an extent at the present time that no single text-book upon the subject, without being cumbrous, can adequately deal with it as a whole.
The text says that in the presence of air fermentation set in at once, and in the absence of air no fermentation whatever occurred. The text says Colin recognised in 1825 that alcoholic fermentation by whatever substance it was started resulted in the formation of an insoluble deposit more active than the original substance. The text says it may be affirmed with some confidence that the chief action of arsenates and arsenites in accelerating the rate of fermentation of sugars by yeast-juice or zymin consists in an acceleration of the rate at which phosphate is produced from the hexosephosphate.
