About this book
H. L. Russell, Dean of the College of Agriculture at the University of Wisconsin, wrote Outlines of Dairy Bacteriology as a concise manual for students in dairying. This is the eighth edition, thoroughly revised, dated Madison, 1907. The preface says knowledge in dairying has grown mainly out of experience, and that bacteriology now helps explain why well-established processes work.
One passage covers how bacteria grow: some need air, some do not, and some grow either way, and a single cell may form two cells in twenty to thirty minutes at temperatures near blood heat. Milk sours quickly until its own acid checks the growth, and cold slows fermentation without necessarily destroying the bacteria. Numbered footnotes cite journals, and one refers to a study of 638 typhoid epidemics. Another passage describes a micrococcus found in bitter cheese and a yeast that grows in milk and cheese.
