About this book
Civic League Cook Book, credited to Civic League, collects cooking recipes, among them baked fish, boiled fish and scalloped salmon. The baked fish recipe says to clean and wipe dry a white fish or any good sized fish, with a stuffing made like that for poultry, but drier, and to sew it up and put it in a hot pan with drippings and a lump of butter. The boiled fish recipe says that all fresh fish, except salmon, should be placed in salted cold water for boiling, and that if placed in boiling water the outside would cook much sooner than the inside.
Blanche's Date Cake calls for beating three egg yolks with one cup of sugar and adding one cup of flour sifted with one teaspoon of baking powder, among other ingredients, and the recipe says no butter is used. The Spanish omelet recipe lists one half can French peas, one half can tomatoes and one tablespoon chopped onion, among other things, and says to serve a plain omelet on a platter with the vegetables around it.
