About this book
The Kitchen Encyclopedia is a twelfth edition, and its opening says you will find many helpful suggestions in this book, all of them tried and practical. A section titled The Truth about Oleomargarine describes the product as a sweet, pure, clean, food product made from rich cream and edible fats. The recipes section says you can make exactly as good cakes, pies, cookies, and candies by substituting for the butter named in your recipes ¾ the quantity of oleomargarine.
A recipe for Loaf Fig Cake lists, in one part, 1 dessertspoonful each of cinnamon, cloves, allspice, and nutmeg. A passage on fireless cooking says that, though it bears the difficult name of recaloration, it is simple enough and is merely the retention of heat through complete insulation. A Timetable for Boiling lists asparagus at 20 to 30 min., shell beans at 1 to 1½ hrs. and string beans at 45 to 60 min.
