About this book
Nelson's Home Comforts is a thirteenth edition, revised and enlarged, and names Mary Hooper as the author of Little Dinners, Every-Day Meals and Cookery for Invalids, among others. A list of Nelson's specialities names patent opaque gelatine, citric acid and essence of lemon, almonds and vanilla, among others. Nelson's Albumen is described as the white of eggs carefully dried and prepared, so that it will keep for an indefinite length of time.
A recipe headed An Economical Jelly says to soak one ounce of Nelson's Gelatine in half-a-pint of cold water for two or three hours. The economical jelly recipe adds that wine can be omitted if desired. The text says that nothing can exceed the perfection in which New Zealand mutton is now placed on the English market, and that the same remarks apply to New Zealand lamb.
