About this book
Soyer's Culinary Campaign combines historical reminiscences of war with the plain art of cookery for military and civil institutions, the army, navy and public. A conversation includes a warning about fever and deaths in the hospital at Scutari, met by a determination to go and render services. The narrator engages Bornet, the Zouave, on a recommendation from the doctor of his regiment and gives him command of the horses.
The cookery instructions describe additions to porridge made from Indian corn and rice, naming lard as an improvement alongside bay-leaf, mint and sliced onion. A recipe for Cabbage Stirabout begins by washing cabbage, removing the stalks and cutting the cabbage slantwise into slices.
