The Modern Housewife or, Ménagère gives directions for making a flexible paste with butter and eggs, working in leaven, and leaving the paste overnight wrapped in a floured cloth. The roll recipe directs shaping small rolls in the morning and baking them in a moderate oven, while its speaker reserves the luxury for very special occasions. The advice on choosing eggs says new-laid eggs should wait about eight or ten hours before use, claiming that the white is not properly set before that time.
The recipe for remains of roast or boiled lamb with peas directs putting small pieces into a stewpan with flour, chopped onions, salt, pepper and water before adding a bay-leaf and boiled peas. The lamb recipe says peas left from a previous day can be used, allowing cauliflower if not too much broken and gently simmered, or a few mushrooms.
