The title page of this cookery book by Alexis Soyer describes a simplified and entirely new system of cookery with nearly two thousand practical recipes. A table of contents begins with sauces, from foundation sauces and thin sauces to sauces with garnitures of vegetables, and a list of kitchen equipment gives quantities of items such as pie-moulds, gridirons, spits, rolling-pins and pudding-cloths.
The numbered recipes give step-by-step directions. No. 854, Turban de Lièvre à la Péronne, has the cook fillet a hare, make cutlets and large quenelles, and dish them alternately on a border of mashed potatoes with a sauce of chopped eschalots, tarragon vinegar, glaze and white sauce.
