About this book
Spices and How to Know Them is by W. M. Gibbs. The dedication names the progressive planter and honest miller of spices, the scrupulous and conscientious wholesale and retail dealer, the earnest commercial man, and the consumer who is particular. The contents list names, among others, chapters on the Early History of Spices, the Adulteration of Spices and how to detect adulterations in spices.
A passage says Bible history mentions cinnamon at a very early date in Exodus, in Proverbs and in Song of Solomon. A passage on mustard says the miller often adds to the remaining bran or tailings an equal quantity of good wheat flour, and also 1 per cent. of good Cayenne pepper and sufficient color (tumeric) to give the same tinge as that of pure mustard. The text says roots are dried and sold as pi pli mul, a favorite medicine of the Hindoos, who use it for palsy and apoplexy.
