Claret phosphate is given as 1 gallon claret phosphate and 1 gallon simple syrup, with about 2 ounces of the syrup to each glass.
Egg lemonade is made from the juice of one lemon, powdered sugar, 1 egg and cracked ice, shaken in a shaker and sprinkled on top with ground nutmeg. The text says ginger syrup can only be made by confectioners, and instructs buying a half barrel or keg of Canton ginger. Bitter-sweet cream for chocolate drops starts with 12 pounds of sugar in a kettle with water to dissolve it, then 1 ounce of acetic acid, cooked to 246°.
