About this book

A boiling pot becomes a subject for scientific explanation in W. Mattieu Williams's account of everyday cooking. Developed from lectures and magazine papers, the book examines the changes involved in preparing food, with chapters on albumen, meat juices, frying, stewing, cheese and bread. Williams explains technical terms as they arise and presents his own experiments and interpretations for readers interested in the reasons behind familiar kitchen practices.

His discussion also reaches beyond the stove to questions of food supply and honest selling. He considers butter substitutes, the prices customers will pay and the transport of frozen meat from Australia and New Zealand to England. These examples place household cooking within a wider nineteenth-century debate about science, commerce and nutrition. The 1892 edition offers a historical view of efforts to explain food preparation, useful for comparing the author's reasoning and assumptions with the concerns of kitchens today.
