The Cook's Oracle; and Housekeeper's Manual by William Kitchiner is a cookery book whose title page promises receipts, directions for carving, and broths, gravies, soups, sauces, pastry, preserves, puddings and pickles, with a system of cookery for Catholic families. It states the quantity of each ingredient by weight and measure, from experiments in the kitchen of William Kitchiner, M.D. This edition was adapted for the American public from the last London edition.
In one passage the writer says he read what he could find on cookery before adding his own remarks, and found the earlier books varied little from one another. The recipes give their steps in order: one for giblet soup uses butter, flour, giblet liquor, a glass of wine and mushroom catchup, and a note says one set of goose giblets or two of duck will make a quart. Another passage describes how a well-bred man behaves at table among company.
