About this book
The Cook's Decameron is presented as a study in taste containing over two hundred recipes for Italian dishes. The contents list potatoes in cream, potatoes with tomato sauce, and potato salad among the dishes. The contents group macaroni, rice, polenta, and other Italian pastes together, and give omelettes and other egg dishes a separate heading.
The recipe for Crotopo Soup lists clear soup, veal, ham, eggs, salt, pepper, nutmeg, and rolls as ingredients. The Crotopo Soup instructions call for pounding lean veal in a mortar and adding cooked ham with some fat, egg yolk, salt, pepper, and very little nutmeg. The Genoese Pastry recipe combines eggs, sugar, butter, flour, and almonds with a little scraped orange or lemon peel and brandy.
