About this book
The preface to Better Meals for Less Money argues that households whose food allowances have not kept pace with prices must use more of the cheaper foods and prepare and combine them skilfully. The preface says good meals depend less on expensive materials than on care and good judgment in using ordinary materials.
The guidance on salads recommends using them freely at all seasons and making them light or nourishing according to the foods served alongside them. The advice on bread calls for saving unused crusts as crumbs for stuffing, croquettes, brown bread, puddings, and other dishes where their color is acceptable. A corn bread recipe without eggs mixes and sifts dry ingredients, adds buttermilk gradually, and directs baking in a hot oven for twenty minutes.
