The Virginia Housewife: or Methodical Cook is by Mrs. Mary Randolph, in an edition dated 1860 with the motto Method is the soul of management. In the preface she explains that she studied the subject and, by experiment, reduced every culinary item to proper weights and measures, which she found cut down attention and labour and saved money. She also compares the government of a family to the government of a nation.
The long contents list covers sauces, vegetables, puddings and more, with entries such as mushroom sauce, to melt butter, caper sauce, oyster catsup, to stew tomatos, sweet potato pudding, pumpkin pudding and baked Indian meal pudding. One recipe stews mushrooms with mace and butter and adds cream and egg yolks. Spruce beer and molasses beer appear among the drinks.
