The Auxiliary cook book is credited to Hebrew Sheltering Guardian Society. Auxiliary Society. A recipe for mashed potatoes under VEGETABLES says to peel potatoes of uniform size, cover with boiling water, and cook until tender. A list of boiling times gives, among others, rice at 30 minutes. Under ENTRÉES, a mushroom fricassee calls for three pounds of fresh mushrooms sautéed a few at a time in butter until half done.
Sandwich recipes include, among others, preserved-ginger, egg, tongue-and-tomato and oyster sandwiches. One casserole recipe calls for twelve or more each of carrots and turnips cut into shapes of marbles or balls and one dozen small onions, among other additions. The recipe headed FRICASSEE TRIPE says to add one pound of boiled tripe cut into pieces one inch square to one pint of boiling milk or cream.
