About this book
Acetaria: A Discourse of Sallets is by John Evelyn. The author tells My Lord that some will wonder what his meaning is, to usher in a trifle with so much magnificence and end at last in a fine receipt for the dressing of a sallet with a handful of pot-herbs. The author writes that the Royal Society needs an establishment in a more settled, appropriate and commodious place, to accomplish an entire freedom.
The text says that there is indeed nothing more wholesome than Lettuce and Mustard for the Head and Eyes, yet either of them eaten in excess were highly prejudicial to them both. The author conceives that a prudent person, well acquainted with the nature and properties of sallet-herbs, is both the fittest gatherer and composer. A list of topics with page numbers runs through Sorrel, Sow-thistle and Snails, noting Snails as safe tasters.
