The text says the teacher should insist upon the pupils taking careful notes while she is demonstrating a lesson. The text says protein compounds, e.g., lean of meat, white of egg, casein (curd) of milk, and gluten of wheat, make muscle, blood, bone, etc.
A recipe calls for from 4 to 6 lbs. of beef from the lower part of the round or rump, trimmed and rubbed well with salt, pepper and flour. A menu table headed Supper or lunch lists, among others, dried canned corned beef, potato croquette and biscuit.
