About this book
The Easiest Way in Housekeeping and Cooking by Helen Campbell is adapted to domestic use or study in classes. The revised-edition preface says that the book remains substantially the same as when first issued, despite some slight additions. The discussion of household labour insists that successful, skilful performance demands training and the best powers a person can bring to the work.
A meat-cooking instruction calls for flouring the meat, browning it thoroughly in a hot oven, and basting it with gravy. The gravy instructions allow catchup and wine if desired, while explicitly stating that neither ingredient is necessary. The discussion of classes for ladies says that teachers usually do all the work, but judges the results less satisfactory than those of a practice-class.
