About this book
Directions for Cookery, in its Various Branches is a tenth edition, with improvements and supplementary receipts, dated 1840. The general contents cover soups, fish, shell fish such as oysters, lobsters and crabs, beef, veal, mutton and lamb, and pork including bacon and sausages. A receipt to roast a goose calls for a stuffing of four good sized onions minced fine, and half their quantity of green sage leaves minced also, and says to send apple-sauce to table with the goose.
A receipt for honey cakes takes a quart of strained honey, half a pound of fresh butter, and a small tea-spoonful of pearl-ash dissolved in a wine glass of water, with as much sifted flour added by degrees as will make a stiff paste. Veal patties call for a pound of the lean of cold roast veal minced very fine, and half a pound of cold boiled ham, fat and lean equally mixed.
