About this book
Lowney's Cook Book is by Maria Willett Howard. The title page calls it a new guide for the housekeeper, intended as a full record of delicious dishes sufficient for any well-to-do family, clear enough for the beginner and complete enough for ambitious providers.
A carving section says that to master the art of carving one must understand the anatomy of the meat to be carved. A dinner menu says salted almonds and bonbons are to be on the table all the time and celery is to be passed with oysters. The recipe for Christmas Plum Pudding says to mix ingredients, pour into buttered mold, cover and steam four hours, and bake in oven one half hour. A passage on boiling says food is generally boiled by putting immediately into boiling water, which sears the surface and keeps in the juices.
