Alon Shaya

Alon Shaya is an Israeli-born chef and restaurateur whose cooking connects family memory with the kitchens of Philadelphia, Italy, Israel, and New Orleans. Shaya, published by Alfred A. Knopf in 2018, is both a memoir and a cookbook, organizing more than one hundred recipes around the experiences that formed his culinary outlook. The book moves by place and personal history rather than by a conventional sequence of courses. Shaya credits early cooking lessons and later restaurant work with giving direction to a difficult adolescence, then follows the development of food that combines Israeli traditions with Italian and southern influences. He founded Pomegranate Hospitality with his wife, Emily, and has led restaurants including Saba and Safta. A two-time James Beard Award recipient, he treats restaurants as civic spaces as well as businesses. Shaya makes that principle legible through recipes: ingredients and techniques are attached to teachers, relatives, migrations, and working kitchens, so food becomes a record of relationships rather than a detached display of expertise.
