Penelope Casas

Penelope Casas was an American food writer who helped English-language readers understand Spain through its regional kitchens, dining customs, ingredients, and wines. The Foods and Wines of Spain, published by Alfred A. Knopf, gathers about four hundred recipes while treating food as an expression of geography and everyday culture rather than as a single national style. Casas learned Spanish cooking through years of travel, family life in Spain, and careful study of home cooks and restaurants. A Vassar College account traces the book’s path from her articles for The New York Times to editor Judith Jones at Knopf.
