Matthew Prescott
Food Is the Solution argues that what a person eats is the largest single lever they hold on climate, and it is built as a cookbook with the argument sitting between the recipes. Prescott spent years at an American animal welfare organisation working on farming practice and food policy, and later on plant-based food strategy, so the advocacy is his profession rather than a hobby. The standard objection is that individual diet change is small next to industrial and regulatory change, and this one does not engage with that as much as it might.
