Niki Segnit

Segnit worked in marketing on food and drink brands before writing The Flavour Thesaurus, which pairs ninety-nine ingredients with one another in every combination and explains, a paragraph at a time, why each pairing works or fails. There are no recipes in the ordinary sense. It won awards, sold widely, and has become a reference that cooks keep open on the counter rather than read through.
